Deixar de comer carne poderia salvar milh\u00f5es de vidas e reduzir significativamente as emiss\u00f5es de di\u00f3xido de carbono. Nos pa\u00edses ricos, nos quais o consumo de carne bovina \u00e9 mais elevado, o porcentual de vidas que se salvaria seria de 5%, destacou o F\u00f3rum Econ\u00f4mico Mundial, que re\u00fane anualmente, em janeiro, as elites econ\u00f4micas e pol\u00edticas mundiais no leste da Su\u00ed\u00e7a. Segundo o estudo, a demanda por carne continuar\u00e1 aumentando durante as pr\u00f3ximas d\u00e9cadas, j\u00e1 que a popula\u00e7\u00e3o mundial pode chegar a 10 bilh\u00f5es de pessoas antes de 2050.<\/p>\n<p>O\u00a0<i>Jornal da USP No Ar<\/i>\u00a0conversou com o professor Sergio De Zen, do Departamento de Economia da Escola Superior de Agricultura Luiz de Queiroz (Esalq) da USP, em Piracicaba, e pesquisador do Centro de Estudos Avan\u00e7ados em Economia Aplicada (Cepea). Em sua an\u00e1lise, De Zen pontua que pa\u00edses da Am\u00e9rica do Sul e da \u00c1frica v\u00e3o na contram\u00e3o desse estudo, que foca nos pa\u00edses da Europa e nos EUA e Canad\u00e1: \u201cEsses produtores est\u00e3o muito longe do seu limite de produtividade que poderia estar englobado neste estudo. Eles n\u00e3o se aprofundaram nessas regi\u00f5es e, por isso, chegaram a essa conclus\u00e3o que \u2014 no meu ponto de vista \u2014 n\u00e3o \u00e9 a mais correta. O Brasil tem uma capacidade de aumento de produtividade muito grande. E isso ocorre de um processo de ado\u00e7\u00e3o de tecnologia e de gest\u00e3o, que nesses pa\u00edses s\u00e3o muito mais complexos do que nos pa\u00edses de clima temperado\u201d.<\/p>\n<p>Uma das discuss\u00f5es no cen\u00e1rio nacional \u00e9 sobre o meio ambiente e seu uso para a produ\u00e7\u00e3o de gado, questionando se isto \u00e9 correto ou n\u00e3o. O professor pondera, afirmando que h\u00e1 estudos feitos com bancos de dados no Brasil e que \u00e9 comparado com outros pa\u00edses do mundo, que permitem com que o agroneg\u00f3cio assuma uma postura de liberar terras para outras atividades ao inv\u00e9s de demandar para sua produ\u00e7\u00e3o. \u201c\u00c9 errado dizer hoje que a pecu\u00e1ria \u00e9 o principal vetor do desmatamento. A pecu\u00e1ria j\u00e1 n\u00e3o \u00e9, porque houve um aumento de produtividade t\u00e3o grande do fator terra que fez isso.\u201d De Zen ainda afirma que existem interesses comerciais na discuss\u00e3o de produ\u00e7\u00e3o e do consumo de carne, mas h\u00e1 regi\u00f5es em que a sua presen\u00e7a \u00e9 indispens\u00e1vel.<\/p>\n<p>No quesito da qualidade da carne bovina, o especialista aponta que naturalmente, com o aumento da produtividade, cresce tamb\u00e9m a melhora no car\u00e1ter do produto. Contudo, h\u00e1 tamb\u00e9m as carnes de baixa qualidade.
